Some people worked at BIRD. Others helped build it. DJ Wooldrik undoubtedly belongs to the latter.

Back when BIRD was still taking shape, he was cooking up a storm in a second-hand kitchen. Not because everything was perfect, but because nothing came easy. With creativity, craftsmanship, and a healthy dose of Rotterdam grit, he turned every service into an adventure.

Anyone who knows DJ knows he never played by the rules. He built his own wood-fired ovens, experimented with fire, smoke and flavour, and saw possibilities where others saw obstacles. His homemade still, which he used to distil moonshine, became part of BIRD folklore after it was confiscated by customs. Those are the kinds of stories that define BIRD, just like the endless evenings where music, food and people came together.

For one night only, DJ returns to the place where he helped shape BIRD's culinary identity. He has created a special anniversary menu inspired by the flavours, dishes and memories of the early years.

And he won't be doing it alone.

Erik Schuit, who has been part of the BIRD family since day one and became legendary for his exceptional desserts, is also returning to the kitchen for this special occasion. Although Erik has since taken a very different path, he'll be putting his chef's jacket back on one last time to celebrate BIRD's 15th anniversary. Together with DJ, he'll bring the flavours, stories and energy of those early days back to life.

The evening's soundtrack will be curated by Wilfried de Jong. As a passionate lover of music, food and remarkable stories, he's the perfect host to set the mood. As the records spin, DJ and Erik will share the stories behind the dishes, the adventures from BIRD's earliest years, and the moments that gradually transformed BIRD into the place it is today.

This isn't an evening of nostalgia. It's a tribute to the people who laid BIRD's foundations with courage, creativity and love. To the pioneers who proved that a stage is built not only with music, but also with great food, meaningful encounters and an unwavering determination to make something extraordinary happen.

For one night, the original BIRD kitchen is together again.
